174. Hasselback Potatoes!
These decadent Swedish style baked potatoes are sure to amaze. They are crispy on the outside, fluffy on the inside, and beautifully seasoned.
Ingredients
- Idaho Potatoes
- Pompeian Robust Extra Virgin Olive Oil
- Butter
- Hilltop Rosemary Seasoning
- McCormick Thyme Seasoning
- McCormick Granulated Garlic
- Sea Salt
- Culinary Basting Brush
- Preheat your oven to 425 degrees. Slice a thin slice off your potatoes so it sits flat on your surface without rolling. Thoroughly rinse your potatoes. Brush with olive oil, season with salt. Bake in the oven for 20 minutes.
- Heat a pot on low heat and add lots of butter, as your butter melts, season with salt, rosemary seasoning, thyme seasoning, and granulated garlic.
- Take your potatoes out and slice your 3/4 of the way down careful not to slice all the way through. Brush with your butter mixture on your potatoes and bake in the oven for 10 minutes.
- Take your potatoes out, gently open your slits with a knife, brush on some more of your butter mixture, gently brush some of your butter mixture in between your slits. Bake in the oven for 10 minutes.
- Brush on more of your butter mixture, brush in between your slits, and bake a final 20 minutes. Serve and enjoy!
