Delicious cajun beyond meat veagan sausages with a herbed potato hash.
Ingredients
- Peeled and Rinsed Idaho Potatoes
- Bayou Cajun Seasoning
- Beyond Meat Plant-Based Sausage
- Morton Iodized Table Salt
- McCormick Ground Black Pepper
- Fresh Chopped Tarragon
- Fresh Chopped Parsley
- Butter
- Pompeian Robust Extra Virgin Olive Oil
Directions
- Heat a pan on medium high heat and add some oil and butter. Season your vegan sausages with cajun seasoning and cook while turning and basting all around for about 8 minutes. Take out and set aside on paper towels to soak up the excess oils.
- Dice your potatoes and pat dry with paper towels. Heat a pan on medium high heat and add some oil and butter. Season your potatoes with salt, pepper, chopped tarragon, and chopped parsley.
- Place your diced potatoes in the pan flat with no potatoes sitting on other potatoes. Sear hard for 6 minutes. Flip each individual piece of potato and sear hard on that side for 6 minutes. Mix your potatoes and cook while turning for about 5 minutes. Set aside on paper towels to soak up the excess oils.
- Plate your dish with your potatoes and sausage. Garnish with some chopped tarragon, and chopped parsley, serve with another side if you'd like and enjoy! #recipesbyvance
