Star Anise Brined Prime Rib Roast

A juicy, tender, and flavorful prime rib brined with a star anise spice blend, and seasoned with a delicious bbq spice rub.


  1. Heat a large pot of water on medium high heat and bring to a boil. Toss in a few star anise, sage leaves, ground nutmeg, brown sugar, ground peppercorns, and salt. Stir well for about 6 minutes to extract those flavors. Place your pot in the freezer to rapidly cool, but don't let it freeze.
  2. When your brine is cold Place your prime rib roast in your brine, cover and place in the fridge for about 2 hours. Take your roast out and pat dry with paper towels.
  3. In a bowl mix together some brown sugar, salt, ground peppercorns, onion powder, garlic powder, smoked paprika, chili powder, and cayenne pepper. Liberally coat your roast with your spice rub, set aside. 
  4. Preheat your oven to 325 degrees. Add a little oil to a baking dish and place in the oven to get hot. When your oil is hot, place your roast in your baking dish and bake in the oven 15 minutes per pound. Take out and let it rest for about 10 minutes, slice and enjoy! #recipesbyvance
