284. Butter Poached Cod w/ Vegetable Couscous!
A delicious butter poached cod lightly seared with couscous, carrots, and raisins.
Ingredients
- Cod Filet
- Diced Carrots
- Couscous
- Raisins
- Marshalls Creek Mediterranean Spice Mix
- Bok Choy
- Organic Cilantro Seasoning
- Butter
- Food Processor
- Pompeian Robust Extra Virgin Olive Oil
- Morton Iodized Table Salt
- McCormick Ground Black Pepper
Directions
- Bring in a pot of water to a boil, add lots of butter. When your butter melts poach your cod for about 5 minutes. Take out and pat dry with paper towels.
- Heat a pan on medium high heat and add some oil and butter. Season your cod with your mediterranean spice mix and cook on both sides for about 6 minutes while basting with your butter. Take out and set aside.
- Bring that pot of water and butter back to a boil, toss in your couscous and diced carrots. Cook for about 10 minutes or until nice and tender.
- Heat that pan back on medium high heat and add some butter. Season your bok choy with salt and pepper and saute for about 4 minutes.
- Blend your carrots until smooth in your food processor. Mix some raisins in with your couscous, plate, top with your bok choy, cod, and carrot puree. Sprinkle on a little cilantro seasoning and enjoy! #recipesbyvance
