272. Japanese Goya Chanpuru!

A delicious okinawan style goya chanpuru stir fry with spam and bean sprouts in traditional Japanese flavors.

Ingredients

Directions
  1. Slice your bitter melon in half length wise and remove the insides, discard the insides. Completely cover your bitter melon with a thick coat of table salt, let it sit for 15 minutes, then rinse well and pat dry. This process removes a lot of the bitterness from the melon.
  2. Thinly slice your melon into half moon pieces. Heat a pan on medium high heat and add some sesame oil. Saute your diced spam and sliced carrots for about 5 minutes occasionally turning.
  3. Add your diced tofu, bean sprouts, bonito flakes, and soy sauce. Season with cooking sake seasoning, and black truffle sea salt and cook for about 5 more minutes occasionally turning. Plate and enjoy! #recipesbyvance
