Extra Tender Chicken Confit

The most tender and juicy herbed roasted chicken confit.


  1. Preheat your oven to 250 degrees. Season your chicken liberally with coriander powder, chopped dillweed, ground black pepper, sea salt, minced ginger, and minced garlic.
  2. Place your chicken in a pot, along with a good amount of pork fat, bake in the oven for about 10 minutes or until your fat has melted down into grease. Rearrange your chicken a little to ensure no sticking. Add some more pork fat if needed (you want your grease to be about a half inch up the pot).
  3. Bake in the oven for another 50 minutes. Take out and flip your chicken. Toss in your green chillies then bake in the oven for another 50 minutes. Take out, serve and enjoy! 
  4. Strain your pork fat and save for another time. #recipesbyvance
