266. Smoked Rosemary Zucchini Wrapped Scallops!
A unique five star recipe. Beautifully seasoned and seared scallops wrapped with delicious zucchini slices.
Ingredients
- Pompeian Robust Extra Virgin Olive Oil
- Fresh or Thawed out Sea Scallops
- Zucchini
- Badia Smoked Paprika
- Sea Salt
- McCormick Ground Black Pepper
- Mandoline Slicer
- Fresh Rosemary Sprigs
- Hilltop Rosemary Seasoning
- Butter
Directions
- Use your mandoline slicer to thinly slice your zucchini lengthwise. Heat a pan on medium high heat and add some butter oil.
- Season your zucchini slices with smoked paprika and rosemary seasoning flakes. Sear your zucchini slices on both sides for about 4 minutes. Take out and set aside.
- Wipe our the pan and heat on medium high heat and add some oil and butter. Season your scallops with sea salt and pepper. Sear on both sides for about 2 minutes. Take out and set aside on paper towels.
- Wrap your scallops with your zucchini slices like in the picture above. Heat that same pan on medium high heat and add some more butter. Sear your wrapped scallops with the zucchini ends on the bottom for about 2 minutes. Plate with a garnish of rosemary sprig and a drizzle of EVOO. Enjoy! #recipesbyvance
