Directions
  1. After you have thoroughly cleaned your snapper, pat dry in the cavity and on the outside. Cut some slits in the middle of the cavity for better cooking.
  2. Heat a large pot on medium high heat and add oil 2 inches up the pot. Mix your thai seasoning, paprika, tamarind, and sugar to make a spice rub. Season your fish liberally with your spice rub.
  3. Deep fry your snapper for about 9 minutes on both sides. Take out and set on paper towels to soak up the excess oils. Squeeze some fresh lime juice on your fish, serve with your choice of sides. Enjoy! #recipesbyvance
