Grilled eggplant and tomato sandwich beautifully seasoned with mediterranean spices and a homemade spicy thousand island dressing.
Ingredients
- All-Clad Nonstick Grill
- Marshalls Creek Mediterranean Spice Mix
- Sliced Eggplant Rinsed & Pat Dry
- Sliced Tomato
- Sliced Red Onion
- Ciabatta Bun
- Pompeian Robust Extra Virgin Olive Oil
- Morton Iodized Table Salt
- McCormick Ground Black Pepper
- Mayonnaise
- Sriracha Sauce
- Heinz Tomato Ketchup
- Sweet Relish
- Aged White Wine Vinegar
- McCormick Minced Garlic
- McCormick Minced Onion
Directions
- In a bowl mix together some mayonnaise, sriracha sauce, ketchup, relish, vinegar, minced garlic, minced onion, salt, and pepper. Mix well to make your spicy thousand island dressing.
- Heat your nonstick grill pan on medium high heat and add some oil and butter. Season your eggplant on both sides with salt, pepper, and your mediterranean spice mix. Grill your eggplant on both sides for about 5 minutes. At the same time grill your red onions and season with salt and pepper. Take off and set aside.
- Drizzle a little oil on your ciabatta buns and grill for about 4 minutes. Spread some of your spicy thousand island dressing on your buns, then build your sandwich with your eggplant, tomato slices, and red onions. Enjoy! #recipesbyvance
