Brisket Loaded Fries

Delicious braised beef brisket on top of deep fried and crispy fresh cut french fries loaded with the works including a spicy cheese sauce.

  • Beef Brisket
  • Idaho Potatoes
  • Store Bought Pickled Red Onions
  • Sliced Jalapenos
  • Store Bought Cole Slaw
  • Flour
  • Butter
  • Shredded Cheddar Cheese
  • Salt 
  • Pepper
  • Red Chili Peppers Flakes
  • Vegetable Oil
  • Beef Broth
  • Season All
  1. Heat a pot on medium high heat and add lots of butter. As your butter melts, add some flour and whisk well to create a roux. Gradually add milk and continue to whisk until thickened.
  2. Gradually add your cheese and whisk well until you reach a nice cheesy sauce consistency. Set aside.
  3. Preheat your oven to 225 degrees. Pat your beef brisket dry with paper towels. Trim the fat from your brisket. Liberally season your brisket with season all. Pour some beef stock in a baking dish about 2 inches up the pan. Place your brisket in the pan and roast/braise in the oven 30 minutes per pound. Take out and wrap with foil, rest for about 40 minutes. Slice and shred your brisket.
  4. Heat a pot on medium high heat and add lots of oil up the pot about 2 inches. Thinly slice your potatoes in french fry shapes. Liberally season you sliced potatoes with salt and pepper. Deep fry your sliced potatoes for about 4 minutes. Take out and set aside on paper towels to soak up the excess oil.
  5. Deep fry your potatoes again in your grease (this second fry will make them nice and crispy).
  6. Plate your fries, pour on your cheese sauce, top with your jalapenos, brisket, coleslaw, and pickled red onions, lightly season with red chili flakes, serve and enjoy!

Stuffed Jalapeno Poppers

Spicy and super cheesy Stuffed Jalapeno Poppers with smoked bacon.

  • Jalapenos
  • Fontina Cheese
  • Queso Fresco Cheese
  • Shredded Cheddar Cheese
  • Shredded Mozzarella Cheese
  • Applewood Smoked Bacon
  • Canola Oil

  1. Heat a pan on medium high heat and add some canola oil. Cook your bacon on both sides for about 5 minutes or until nice and crispy. Set aside on paper towels to soak up the excess grease.
  2. Slice your jalapenos in half lengthwise. Drizzle them with a little canola oil. Preheat your oven to 400 degrees.
  3. Chop your bacon into small bits. Mix your bacon bits with a mixture of fontina cheese, queso fresco cheese, cheddar cheese, and mozzarella cheese. 
  4. Stuff your jalapenos with your bacon and cheese mixture. Top it off with more bacon bits, bake in the oven for about 8 minutes, serve and enjoy!
