416. Sweet Potato Corn Cakes
Crispy delicious cheesy pan seared potato cakes with corn and cilantro.

- Sweet Potatoes
- Butter
- Brown Sugar
- Drained Canned Corn
- Salt & Pepper
- Chopped Cilantro
- Parmesan Cheese
- Olive Oil
Directions
- Preheat your oven to 400 degrees. Puncture your sweet potatoes with a fork. Bake your sweet potatoes in the oven for about 1 hour take out and let cool.
- Peel the skin off of your potatoes. Mash your sweet potatoes in a bowl then mix in some melted butter, brown sugar, drained canned corn, salt, pepper, chopped cilantro, and parmesan cheese.
- Form your sweet potato mixture into patties. Heat a pan on medium high heat and add some oil and butter.
- Pan sear your patties on both sides for about 6 minutes each or until golden brown. Enjoy!
