Spicy vegan tacos with avocado and lime dressing.
Ingredients
- Spicy Vegan Sausage
- Diced Mango
- Tomato
- Fresh Chopped Cilantro
- Corn Tortillas
- Diced White Onion
- Corn On The Cob
- Pompeian Robust Extra Virgin Olive Oil
- Morton Iodized Table Salt
- McCormick Ground Black Pepper
- Creamy Cilantro Lime Dressing
Directions
- Bring a pot of salted water to a boil and boil your corn on the cob for about 10 minutes or until al dente. Take out and set aside.
- Bring another pot of water to a boil and boil your tomatoes for about 8 minutes or until al dente. Take out and set aside.
- As your tomatoes cook slice the kernels off of your cob, season with salt and pepper then set aside. When your tomatoes are done, peel the skin off of your tomatoes. Slice and dice your tomatoes into small cubes. Set aside.
- Heat a pan on medium high heat and add some oil. Peel the casing from your sausages. Place your vegan sausages in your pan, cook while breaking up and stirring for about 10 minutes. Take out and set aside on paper towels to soak up the excess oil.
- Heat another pan on medium high heat and add some oil. Sear your tortillas on both sides for about 2 minutes each or until they start to char a little.
- Build your tacos with your vegan sausages, diced white onion, corn, diced mango, and diced tomatoes. Drizzle on some cilantro avocado & lime dressing, garnish with some fresh chopped cilantro. Enjoy!
