Eggplant Pesto White Pizza



A healthy eggplant pizza with a cream cheese mixture and a delicious pesto.

Ingredients






Directions
  1. In a bowl mix together some cream cheese and sour cream. In another bowl make a pesto. Mix together some fresh chopped basil, chopped pine nuts, parmesan cheese, minced garlic, and olive oil. Season with salt and pepper.
  2. Preheat your oven to 400 degrees. Heat a pan on medium high heat and add some oil. Sear your eggplant on both sides for about 6 minutes, season with salt and pepper.
  3. Lightly flour your counter top surface, and roll out your puff pastry into a large square. Spread your cream cheese mixture on your puff pastry, top with your sauteed eggplant, spread your pesto on top of you eggplant, and sprinkle with diced tomatoes. Bake in the oven for about 25 minutes. Garnish with some fresh basil leaves, enjoy!
