Southwest Egg Rolls

No fuss, simple and delicious egg rolls with south western ingredients and flavors.


  1. Heat a pan on medium high heat and add some oil. Toss in your chopped chicken, and diced red peppers. Season with salt, pepper, garlic powder, onion powder, and cumin. Cook while mixing for about 8 minutes. 
  2. Add your corn and drained black beans. Season to taste with cilantro seasoning, more salt and pepper. Cook while mixing for about 3 minutes. Take out and set aside on paper towels to soak up the excess oil. Heat a pot on medium high heat and add some oil about 2 inches up the pot.
  3. Place some of your rice papers on kitchen towels. Place some of your chicken mixture on your rice paper near a corner closest to you. Begin to tightly roll your chicken mixture in your rice paper folding the side corners in tightly. Wet your finger and dab the end corner of your rice paper with a little water to seal your egg roll.
  4. When your pot of oil gets hot carefully place your egg rolls in your pot to deep fry. Deep fry for about 4 minutes or until golden brown. Slice, plate, serve with your choice of dipping sauce and enjoy!
