  1. Add cold water to a large bowl of water. Add to it, salt, brown sugar, dillweed seasoning, lemon zest, and minced garlic. Mix well and submerge your salmon filets in your brine, cover and marinate for 2 hours. Take out and pat dry.
  2. Heat your electric smoker to 200 degrees. In a bowl mix together some brown sugar, paprika, soy sauce, pepper, olive oil, and lemon juice.
