151. Indian Kathi Rolls!
A Indian street food staple, egg washed fried flatbread with deliciously seasoned mutton / lamb, onions, chilies and a cilantro chutney.

- Flatbread
- Boneless Lamb Loin
- Fire Roasted Diced Green Chillies
- Szechuan Dried Red Chillies
- Sliced White Onions
- One Cracked Egg Wash
- McCormick Paprika
- Premium Ground Coriander Powder
- McCormick Ground Cinnamon
- Morton Iodized Table Salt
- Pompeian Robust Extra Virgin Olive Oil
- Food Processor
- Fresh Green Cilantro
- Organic Minced Ginger
- Lime Juice
- Domino Granulated Sugar
- Chat Masala
- Culinary Basting Brush
Directions
- In a food processor add olive oil, lots of green cilantro, minced ginger, lime juice, sugar, and chat masala. Pulse to blend well into a nice sauce. Set aside.
- Chop your lamb loin into small pieces. Chop your dried red chillies. Season your lamb with coriander powder, cinnamon, salt, and paprika. Heat a pan on medium high heat and add some oil. Toss in your onions, chopped chillies, and lamb.
- Saute occasionally turning for about 8 minutes. Take out and set aside. Wipe the pan out, heat it on medium high heat and add some oil, brush your flatbread on both sides with your egg wash. Sear on both sides for about 2 minutes, take out and plate.
- Place your lamb and chille mix in the center of your flatbread, gently roll it up, serve with your cilantro chutney and enjoy!
