143. Blackened Salmon w/ Sautéed Plantains!



Blackened butter basted salmon with sweet seasoned and seared plantains.

Directions
  1. Preheat your oven to 400 degrees. Heat a pan on medium high heat and add some oil and butter. Season your salmon fillets with salt, pepper, and smoked paprika. Sear your salmon on both sides for about 6 minutes occasionally basting with your butter and oil. Drizzle in some liquid smoke as it cooks. Transfer to the oven and bake for about 10 minutes at 400 degrees to cook all the way through.
  2. Slice your plantains in half lengthwise. Heat another pan on medium high heat and add some oil and butter. Season your plantains with salt, pepper, and brown sugar. Sear your plantains on both sides for about 8 minutes and your plantains are nice and tender.
  3. Plate your dish, serve with a kale salad, and some yellow sriracha sauce, garnish with some fresh chopped parsley, and enjoy!
