Fresh Avocados and a perfectly medium fried egg on a toasted wheat tortilla with olives and arugula, perfect for breakfast or brunch.

- Flour Tortillas
- Arugula
- Pompeian Robust Extra Virgin Olive Oil
Directions
- Heat a pan on medium high heat and drizzle in a little oil toast your tortillas in the pan, take out and set aside. Drizzle in a little more oil. Fry an egg to medium.
- Top your tortillas with your sliced avocados, then with your fried egg. Garnish with some olives and arugula, drizzle on a little olive oil and enjoy!
