127. Scallop Mushroom Leek Broth!



Perfectly seasoned and seared scallops on top of a a beautiful mushroom, leek, and onion seafood broth.

Directions
  1. Heat a pan on medium high heat and add lots of butter. Toss in your chopped leeks, chopped white onions, and sliced mushrooms. Saute while turning for about 5 minutes. Pour in some seafood stock, season with salt and pepper, turn your heat down to simmer and simmer for about 6 minutes occasionally turning. Turn off the heat.
  2. Heat another pan on medium high heat and add lots of butter. Season your scallops with salt, pepper, and smoked paprika. Sear your scallops on both sides for about 2 minutes. 
  3. Pour your leek, onion, and mushroom broth into a bowl top with your scallops, garnish with your chopped chives, and enjoy!
