214. Red Beans & Rice!



Nicely seasoned red beans and yellow rice with carrots and celery.

Ingredients
Directions
  1. Thoroughly rinse your red beans, place them in a large bowl submerged in water, soak them overnight in the fridge. Drain your red beans and rinse thoroughly again. 
  2. Heat a pot of water on medium high heat and bring to a boil, add your red beans, diced carrots, and diced celery, add a few bay leaves, generously season with thyme seasoning, cayenne pepper, and creole seasoning.
  3. Turn your heat down to a simmer, cover and simmer for 2-2/12 hours, set aside. 
  4. Bring another pot of water to a boil. Pour in some of your seasoned yellow rice, generously season with turmeric seasoning, stir and mix well for about 6 minutes or until aldente. Drain and set aside.
  5. Plate some of your rice in a bowl, using a slotted spoon scoop out some of your beans and vegetables, mix well with your rice and enjoy!
