227. Sweet Potato & Black Olive Vinagrette Salad!
Deliciously sweet, seasoned and seared sweet potatoes with black olives, spinach salad, and a tasty homemade vinagrette.
Ingredients
- Sliced & Diced Sweet Potato
- California Black Olives
- Pine Nuts
- Fresh Spinach
- Avocado Oil
- Aged White Wine Vinegar
- Sea Salt
- McCormick Grounded Black Peppercorns
- McCormick Ground Cinnamon
- Organic Ground Nutmeg
- Ground Cloves
- Butter
Directions
- Heat a pan on medium high heat and add lots of butter. Season your sweet potatoes with cinnamon, nutmeg, and cloves.
- Cook while occasionally turning for 10-15 minutes or nice and soft. Wipe the pan out. Add some more butter to the pan.
- Toss in some of your black olives and pine nuts, season with sea salt, and fresh ground pepper. Cook occasionally turning for about 6 minutes, take out and set aside.
- Toss lots of spinach in the pan and turn the heat down low. Cook while mixing for 1 minute (so your spinach starts to shrink and wilt).
- Place your spinach in a bowl, drizzle with some of your avocado oil and some of your white wine vinegar, season with salt and pepper, mix and toss.
- Top with your sweet potatoes, olives, and pine nuts. Enjoy! #recipesbyvance
