9. Curry Chicken & Sausage Gumbo

Delicious andouille sausage, smoked flavored curry chicken with fresh sauteed okra, carrots, and celery in a tasty beef broth gumbo and rice.


  • Chicken Breast
  • Andouillie Sausage
  • Diced Celery
  • Diced Okra
  • Diced Carrots
  • Rice
  • Beef Broth
  • Salt & Pepper
  • Smoked Paprika
  • Garlic Powder
  • Curry Powder
  • Chopped Spring Onion
  • Chopped Red Onion
  • Olive Oil


  1. Bring a pot of beef broth and water to a boil. Cook your rice in this mixture until al dente. Drain and set aside. Set your pot of beef broth to the side.
  2. Heat a pan on medium high heat and add some oil and butter. Season your chicken breast with smoked paprika, garlic powder, curry powder, salt and pepper and sear on both sides for about 7 minutes or until there is no pink inside. Set aside.
  3. In the same pan add some more oil and butter. Sear your sausage all around for about 7 minutes occasionally turning. Set aside.
  4. In the same pan add some more oil and butter. Saute your diced celery, okra, carrots, chopped red onions, and chopped spring onions (season to taste with salt & pepper). Set aside.
  5. Slice and dice your chicken breast, then slice your sausage, set aside. Reheat your pot of beef broth then add in your drained rice, your diced chicken, your sliced sausage, and your celery, okra, and carrot mixture. Mix while stirring and season with pepper, garnish with some more chopped red and green onions, plate and enjoy!
