Smoky Beef Stir Fry w/ Potatoes & Corn - Mom's Recipe

Lovely, Smokey Flavored Beef Stir Fry, with Buttery Corn on the Cob and Perfectly Seasoned Baby Potatoes.

  • Bag of Corn on the Cob
  • Baby Potatoes
  • Bag of Cooked Beef Fajitas
  • Sliced Yellow and Red Peppers
  • Sliced White & Red Onions
  • Liquid Smoke
  • Salt & Pepper
  • Chicken Broth
  • Butter
  • Olive Oil


  1. Preheat your oven to 400 degrees. Add some oil to a baking dish and put it in the oven to get the oil hot. Slice your baby potatoes in half, season with salt and pepper and roast in the oven for about 20 minutes or until nice and tender.
  2. Heat a pot on medium high heat filled with just enough water to almost cover your corn on the cob. Add some butter to the water and boil your corn on the cob for about 10 minutes.
  3. Heat a pan on medium high heat and add some oil. Saute your peppers and onions while stirring for about 4 minutes.
  4. Add some butter and pour in some chicken broth and liquid smoke, turn your heat down low to simmer. Toss in your beef to reheat while stirring in the broth for about 5 minutes (remember it's already cooked). Take out and set aside discarding the extra broth juices.
  5. Plate like so, enjoy!
