Blackened Crispy Skin Chicken + Yellow Rice & Peas
A succulent blackened chicken thigh, served over a delicious yellow rice and pea mix.
Ingredients
- Bone In Chicken Thigh
- Yellow Rice
- Canned Peas
- Celery Stalk
- Blackened Seasoning
- Olive Oil
- Butter
Directions
- Heat a pan on medium high heat and add some oil and butter. Preheat your oven to 400 degrees. Pour a little oil in a baking dish and put it in the oven to get hot.
- Season your chicken liberally with your blackened seasoning. Pan sear skin side down first for about 8 minutes occasionally turning up slightly at an angle to get a nice sear all around the skin. Occasionally baste your chicken. Flip over and sear the other side for about 8 minutes.
- Finish cooking your chicken in the oven for about 10 minutes or until there is no pink inside.
- Cook your rice according to package instructions. Cook your peas. Thinly slice lengthwise some strips of celery for garnish, plate and enjoy!
