Cheesy Mushroom & Artichoke Stuffed Chicken

Simple & delicious stuffed mushroom and artichoke chicken, cheesy and seasoned beautifully served with a tasty creamy bacon & ranch dressing.


  • Chicken Thigh
  • Sliced Button Mushrooms
  • Canned Artichoke Hearts
  • Salt & Pepper
  • Cumin
  • Butter
  • Olive Oil
  • Swiss Cheese
  • Creamy Bacon Ranch Dressing


  1. Season your chicken thigh with cumin, salt and pepper. Preheat your oven to 400 degrees and add some oil in a baking dish. Place your baking dish in the oven for about 5 minutes to get the oil hot.
  2. Season your artichoke hearts and mushrooms with salt and pepper. Lift up the skin of the chicken thigh and place some artichoke heats and mushrooms under the skin.
  3. Bake your stuffed chicken in the oven for about 30 minutes or until there is no pink inside. 
  4. Place a slice of swiss cheese on top of your chicken and continue to bake in the oven until your cheese melts. Take out and set aside to rest.
  5. Heat a pan on medium high heat and add some oil and butter. Season some more artichoke hears and mushrooms with salt and pepper and saute while flipping and stirring for about 7 minutes. Plate and serve with a little creamy bacon ranch dressing and enjoy!
