Chicken Thigh Curry

Delicious roasted chicken thighs perfectly seasoned with a beautiful red chili curry.

  • Chicken Thighs
  • Red Curry Paste
  • Kaffir Leaf Powder
  • Chili Powder
  • Fish Sauce
  • Sea Salt
  • Fresh Ground Black Pepper
  • Sugar
  • Coconut Milk
  • Olive Oil

  1. Preheat your oven to 400 degrees. Drizzle a baking pan with a little olive oil. Place it in the oven to get hot. Season your chicken thighs with chili powder, salt, and pepper. Bake in the oven for about 30 minutes or until there is no pink inside. Set aside to rest.
  2. Heat a pan on medium high heat and add some oil. Add red curry paste and heat while stirring for 2 minutes. Pour in some coconut milk then bring to a boil.
  3. Add some fish sauce. Turn your heat down to simmer. Season to taste with kaffir leaf powder, chili powder, sea salt, ground black pepper, & sugar.
  4. Thinly slice your chicken thighs. Serve your curry sauce in a bowl, serve with white rice and your chicken slices, enjoy!
