106. Rojo Beef & Bean Burrito!



A simple no fuss cheesy beef and bean burrito beautifully seasoned, flour tortilla, and a fragrant homemade tomato salsa rojo.

  • Ground Beef
  • Black Beans
  • Peeled Canned Whole Tomatoes
  • Fresh Garlic Peeled & Chopped
  • Sliced Red Onions
  • Diced Jalapenos
  • Shredded Mix Cheese
  • Flour Tortilla
  • Olive Oil
  • Taco Seasoning
  • Salt
  • Pepper
  • Food Processor
Directions
  1. Heat a pan on medium high heat and add some oil. Season your ground beef and black beans with your taco seasoning. Cook your ground beef and black beans for about 7 minutes while breaking up and seasoning to taste. Take out and set on paper towels to soak up the excess oils.
  2. Preheat your oven to 400 degrees. Add to a food processor your canned tomatoes, your chopped garlic, and sliced red onions, season with salt and pepper. Pulse well to blend, set aside.
  3. Place your ground beef and black mixture in your tortilla, wrap and roll tightly tucking in the ends. Pour some of your salsa rojo on top of burrito, top with plenty of shredded cheese, then bake in the oven for about 5 minutes, enjoy!
