Sweet & Spicy Chicken w/ Kale Slaw



Delicious quarter chicken with sweet and spicy flavors served over a kale slaw with a balsamic vinaigrette. 

Ingredients



Directions
  1. Heat a pan on medium high heat and add some oil and butter. Add some of your carrots and red onions, saute for about 4 minutes while mixing. Toss in some of your shredded cabbage and kale and continue to stir fry for about 5 minutes. Season with salt and pepper, take out, set aside in a bowl and mix with some of your fresh chopped parsley. Cover and place in the fridge for about 30 minutes to cool.
  2. Rub your chicken down with salt, pepper, crushed red pepper, some cherry juice, and molasses.  Place in a bowl, cover and refrigerate for 30 minutes. 
  3. Preheat your oven to 400 degrees. Heat a pan on medium high heat and add some oil and butter. Cook your chicken on both sides for about 8 minutes to get a nice char. Transfer to the oven and bake for about 25 minutes. 
  4. Plate your kale slaw, dress with your balsamic vinaigrette, top with your chicken and enjoy!
