Star Anise Brined Prime Rib Roast



A juicy, tender, and flavorful prime rib brined with a star anise spice blend, and seasoned with a delicious bbq spice rub.

Ingredients





Directions
  1. Heat a large pot of water on medium high heat and bring to a boil. Toss in a few star anise, sage leaves, ground nutmeg, brown sugar, ground peppercorns, and salt. Stir well for about 6 minutes to extract those flavors. Place your pot in the freezer to rapidly cool, but don't let it freeze.
  2. When your brine is cold Place your prime rib roast in your brine, cover and place in the fridge for about 2 hours. Take your roast out and pat dry with paper towels.
  3. In a bowl mix together some brown sugar, salt, ground peppercorns, onion powder, garlic powder, smoked paprika, chili powder, and cayenne pepper. Liberally coat your roast with your spice rub, set aside. 
  4. Preheat your oven to 325 degrees. Add a little oil to a baking dish and place in the oven to get hot. When your oil is hot, place your roast in your baking dish and bake in the oven 15 minutes per pound. Take out and let it rest for about 10 minutes, slice and enjoy! #recipesbyvance

Crispy Creole Fish, Potatoes & Onions



Perfectly seasoned, breaded and deep fried haddock and onions along with some deep fried salt & pepper potato wedges, and a creole citrus tarter sauce.

Ingredients





Directions
  1. Heat a pot on medium high heat heat and add some oil up the pan about a inch and a half. Season your potatoes liberally with salt and pepper and deep fry for about 10 minutes. Take out and set aside to rest on paper towels for about 5 minutes. Drop your potato wedges back in the grease to deep fry again this time for about 5 minutes. Take out and set aside on paper towels.
  2. Mix together in a bowl some corn starch, baking powder, creole seasoning, salt, and pepper. Add water a little at a time as you whisk well and turns into a pancake batter consistency. Pour in another bowl some italian bread crumbs.
  3. Heat that same pot of oil on medium high heat. Dredge your fish in your batter, then into your bread crumbs, then into the deep fryer pot for about 6 minutes and golden brown. Take out and set aside on paper towels.
  4. Dredge your onions in your batter, then into your bread crumbs, then deep fry for about 4 minutes and golden brown. Take out and set aside on paper towels. 
  5. In a bowl mix together some mayonnaise, yellow mustard, creole seasoning, lemon juice, and your chopped banana peppers. For your creole citrus tarter sauce. Plate your dish and enjoy! #recipesbyvance

Vegan Grilled Eggplant & Tomato Sandwich



Grilled eggplant and tomato sandwich beautifully seasoned with mediterranean spices and a homemade spicy thousand island dressing.

Ingredients





Directions
  1. In a bowl mix together some mayonnaise, sriracha sauce, ketchup, relish, vinegar, minced garlic, minced onion, salt, and pepper. Mix well to make your spicy thousand island dressing.
  2. Heat your nonstick grill pan on medium high heat and add some oil and butter. Season your eggplant on both sides with salt, pepper, and your mediterranean spice mix. Grill your eggplant on both sides for about 5 minutes. At the same time grill your red onions and season with salt and pepper. Take off and set aside.
  3. Drizzle a little oil on your ciabatta buns and grill for about 4 minutes. Spread some of your spicy thousand island dressing on your buns, then build your sandwich with your eggplant, tomato slices, and red onions. Enjoy! #recipesbyvance
