  1. Bring a pot of water to a boil. Pour in your couscous and boil for 8-10 minutes or until nice and aldente. Drain and set aside in a bowl with some butter, season with salt and pepper and mix well.
  2. Heat a pan on medium high heat and add some oil and lots of butter. Toss in your fennel stems, sliced potatoes, and black olives. Season with salt and pepper, saute, occasionally, turning for about 20 minutes. 
  3. Toss in your chopped onions, and drained garbanzo beans, continue to saute for 5-7 minutes. Top your couscous off with your garbanzo and potato mixture, garnish with fresh fennel, and enjoy!
