Boneless Mojito Lime Pork Chops


Succulent marinated lightly floured and seared pork chops.

Ingredients





Directions
  1. Pour some of your mojito lime marinade into a large ziplock bag. Place our pork chops in there, seat tight with little air in the bag. Mix well, refrigerate for about an hour, take out, scrape off the excess marinade, set aside for about 10 minutes so the pork can really absorb the marinade.
  2. Lightly dust your chops with flour, season with season salt and paprika and set aside. Heat a pan on medium high heat and add some oil. Pan sear your chops for about 8 minutes on both sides or until there is no pink inside. Serve with your choice of sides and enjoy!

Vegan Tacos w/ Cilantro Avocado Dressing



Spicy vegan tacos with avocado and lime dressing.

Ingredients





Directions
  1. Bring a pot of salted water to a boil and boil your corn on the cob for about 10 minutes or until al dente. Take out and set aside.
  2. Bring another pot of water to a boil and boil your tomatoes for about 8 minutes or until al dente. Take out and set aside.
  3. As your tomatoes cook slice the kernels off of your cob, season with salt and pepper then set aside. When your tomatoes are done, peel the skin off of your tomatoes. Slice and dice your tomatoes into small cubes. Set aside.
  4. Heat a pan on medium high heat and add some oil. Peel the casing from your sausages. Place your vegan sausages in your pan, cook while breaking up and stirring for about 10 minutes. Take out and set aside on paper towels to soak up the excess oil.
  5. Heat another pan on medium high heat and add some oil. Sear your tortillas on both sides for about 2 minutes each or until they start to char a little.
  6. Build your tacos with your vegan sausages, diced white onion, corn, diced mango, and diced tomatoes. Drizzle on some cilantro avocado & lime dressing, garnish with some fresh chopped cilantro. Enjoy!

One Skillet Chicken & Chorizo


Smoked chorizo with diced chicken seasoned to perfection. Serve over Spanish rice.

Ingredients





Directions
  1. Season your chicken breasts with salt, pepper, garlic powder, and smoked paprika. Slice and dice your chicken breasts and chorizo. Heat a pan on medium high heat and add some oil. 
  2. Cook your chicken and chorizo for about 10 minutes occasionally stirring and flipping. Serve over Spanish rice. Enjoy!
