202. Healthy Vegetable Pasta Salad!



A simple, healthy, and delicious creamy pasta salad with steamed vegetables, beautifully seasoned.

Ingredients
Directions
  1. Cook your fusilli pasta noodles according to packaged instructions. Drain and set aside. Heat a large pan on medium high heat and bring water to a boil about an inch up in the pan. 
  2. Place your sliced carrots, sliced cucumbers, and broccoli florets in your bamboo steamer. Place your steamer in the boiling water and steam your vegetables for about 8 minutes. Keep your vegetables inside your steamer and set your steamer aside.
  3. Wipe that pan out, heat that pan on medium high heat and add lots of butter. As the butter starts to melt add a little flour and whisk well to create a roux. 
  4. Gradually pour in some heavy cream and continue to whisk well, add some of your grated parmesan cheese, whisk well until your sauce reaches a nice consistency, adding more cream and / or cheese if needed.
  5. Toss your fusilli pasta noodles, and your steamed vegetables in with your sauce, serve and enjoy!
