Creamy Pumpkin Soup



Delicious seasoned & sauted pumkin beautifully pureed and mixed to create this creamy soup.

Ingredients


    Directions
    1. Heat a pot on medium high heat and add some oil. Toss in your diced pumpkin pieces, season with salt, pepper, and rosemary seasoning. Saute occasionally turning for about 20 minutes. Take out some of your sauted pumpkins and set aside.
    2. Pour some vegetable stock in your pot, season to taste with salt and pepper, bring to a boil, turn your heat down to simmer, simmer for about 30 minutes, pour in some cream during the last 10 minutes of simmering, mix well. 
    3. Take out, transfer to a food processor, pulse into a nice soupy consistency, mix in some of your sauted pumpkins, garnish with your chopped chives, and enjoy!
