51. Chicken & Potato Tikka Masala!

 


Indian chicken potato and tomato masala curry beautifully seasoned and prepared.

  • Yogurt
  • Salt
  • Paprika
  • Coriander
  • Cumin
  • Ginger
  • Cinnamon
  • Turmeric
  • Garam Masala
  • Boneless Chicken Breasts
  • Sliced & Diced Potatoes
  • Olive Oil
  • Butter
  • Diced Onions
  • Tomato Paste
  • Canned Tomatoes
  • Heavy Cream
  • Chopped Cilantro
Instructions
  1. Mix together in a bowl some yogurt, salt, paprika, coriander, cumin, ginger, cinnamon, turmeric, & garam masala. Add some boneless chicken breasts to the bowl, coat well, cover, then refrigerate for at least 1 hour.
  2. Heat a pot on medium high heat and bring about 3 inches of water to a boil, toss in your sliced and diced potatoes and cook until semi-aldente, take out, drain and set aside.
  3. Heat a pan on medium high heat and add some oil and butter, cook your chicken on both sides for about 4 minutes to achieve a nice char, it will not be cooked all the way through but we'll finish cooking it later.
  4. Heat a pan on medium high heat and add some butter. Cook your diced onions, tomato paste, canned tomatoes, your bowl of spices and yogurt, cream, and chopped cilantro.
  5. Cook for about 30-40 minutes on simmer occasionally stirring and scraping up those beautiful brown bits from the bottom of the pan and adding more seasoning to taste.
  6. Cut your chicken breasts into bite sized pieces. With 20 minutes left on your cook time add your chicken and your potatoes to your saucepan and continue to cook occasionally stirring. Garnish with fresh cilantro, serve and enjoy!
