Sweet Potato & Black Olive Vinagrette Salad

Deliciously sweet, seasoned and seared sweet potatoes with black olives, spinach salad, and a tasty homemade vinagrette.


  1. Heat a pan on medium high heat and add lots of butter. Season your sweet potatoes with cinnamon, nutmeg, and cloves. 
  2. Cook while occasionally turning for 10-15 minutes or nice and soft. Wipe the pan out. Add some more butter to the pan.
  3. Toss in some of your black olives and pine nuts, season with sea salt, and fresh ground pepper. Cook occasionally turning for about 6 minutes, take out and set aside.
  4. Toss lots of spinach in the pan and turn the heat down low. Cook while mixing for 1 minute (so your spinach starts to shrink and wilt).
  5. Place your spinach in a bowl, drizzle with some of your avocado oil and some of your white wine vinegar, season with salt and pepper, mix and toss.
  6. Top with your sweet potatoes, olives, and pine nuts. Enjoy! #recipesbyvance
