Spicy Chicken Laksa

A traditional chicken laksa with Asian flavors and heat from red and green chiles.


  1. Heat a pot on medium high heat and add some oil. Add a cup of your laksa paste and cook while whisking for about 5 minutes. Add a cup of your coconut milk and cook while whisking for about 3 minutes.
  2. Pour in some chicken stock, and some water, turn your heat down to simmer mix well and simmer for 10 minutes.
  3. Place your chicken breasts in your laksa and simmer for 12 minutes. Take your chicken out and set aside. Add some fish sauce and lime juice to your laksa, mix and continue to simmer for 5 minutes.
  4. Slice and chop your chicken breasts. Toss your chicken back in your laksa mix well. Place your enoki mushrooms on top, cover and continue to simmer for 5 minutes. 
  5. Remove your mushrooms and set aside. Spoon your laksa into a bowl, top with your mushrooms, garnish with your chilies and chives and enjoy! #recipesbyvance
