Thai Chicken & Artichoke Stem Satay

Perfectly grilled, beautifully seasoned Taiwanese chicken and artichoke heart stems. 


  1. Using a very sharp knife slice the chicken off your thigh bones and dice into small pieces. Cut your artichoke heart stems into small pieces about a inch and a half. Slice a thin layer off and around your stems throwing away the outer layer of skin. Fire up the grill.
  2. In a bow mix together peanut butter, soy sauce, fresh squeezed lime juice, brown sugar, curry powder, salt, and cayenne pepper. Toss in your chicken and artichoke stems, mix well. 
  3. Skewer your chicken and artichoke stems, grill for about 6 minutes occasionally turning. Plate and enjoy!
