Blackened Crispy Skin Chicken + Yellow Rice & Peas


A succulent blackened chicken thigh, served over a delicious yellow rice and pea mix.


Ingredients

  • Bone In Chicken Thigh
  • Yellow Rice
  • Canned Peas
  • Celery Stalk
  • Blackened Seasoning
  • Olive Oil
  • Butter



Directions

  1. Heat a pan on medium high heat and add some oil and butter. Preheat your oven to 400 degrees. Pour a little oil in a baking dish and put it in the oven to get hot.
  2. Season your chicken liberally with your blackened seasoning. Pan sear skin side down first for about 8 minutes occasionally turning up slightly at an angle to get a nice sear all around the skin. Occasionally baste your chicken. Flip over and sear the other side for about 8 minutes.
  3. Finish cooking your chicken in the oven for about 10 minutes or until there is no pink inside.
  4. Cook your rice according to package instructions. Cook your peas. Thinly slice lengthwise some strips of celery for garnish, plate and enjoy!
